Making Apple Pie





Of course it was an argument about who actually dug the holes and planted the three apple trees. My recollection is me as I remembered there were actually three. My other proof is their location. The spot has been disasterous as we have lost two trees and really only harvested twice in 12 years. This year I picked 12 lovely apples. They really were beautifully shaped and colored. They are a sour apple...perfect for pies.
So... I baked one pie from our own tree's apples. It is funny as most people have a tree and get boxes off them.
So, here is the blow by blow.
Here's a sort of recipe:
12 apples
peel them and put the peels on a paper towel(throw both in trash)
Cut the peeled apples in slices.
This could make about 3 or four cups of apples
Put in about half as much sugar, a teaspoon of cinnamon and 2 tablespoons and up to 1/4 cup of flour depending on how juicy those apples are.
you can add some lemon to the mix too if you wanted.
This will thicken the juice and make it really thick and sweet.
About that pie crust:
You could use purchased ones, I have for years.
But, now I make them again from scratch.
So, here's a sort of recipe:
One to two cups of flour (i use unbleached white)
BUTTER.
You heard me butter
About 2/3rds 0 3/4 cup or 1 to 1/2 sticks (soften)
1 tablespoon vinegar
1 egg
salt
cut it up... use your blender (did I say blender... don't use your blender... use your mixer... that's the other utensil tucked away in your drawer somewhere. Then add about 1/4 cup of ice cold water.
The dough should be soft... not sticky so you can roll it with a rolling pin.
Let me say a few words about the rolling pin. Mine are usually purchased from antique stores for really cheap. Not that they are expensive mind you... they aren't and buy a new on if you must. I just think an old rolling pin has a history and the user was probably a better baker than me. Although, I once bought one that was lopsided. Check the roundness of this rolling pin to avoid holes in the pie crust.
Roll the crust out.
I use spray to grease the pie plate.
Put one crust on bottom of pie plate. Poke holes in the crust with a fork.
Add all those apples until they are piled really high... don't worry about how high... they shrink like old people when their baked.
Cover with the other nicely rolled out crust
Bake that for about 45 minutes to an hour.
Eat it while its hot with ice cream...
Eat one slice. Bring the rest to work or you won't be able to
weigh yourself for a month.
So... there you have it...

PS I forgot to wash the apples. Not to worry. They were baked at 350 degrees. All e coli killed unlike the spinach we all love so much.

A while ago Angie and I were bored and decided to harass some people on a recipe message board.
I suggested the following recipe
Puppy Pie
1 litter of puppies
1 gunny sack
1 bat
1 pie crust
1 pinch of powdered sugar
Put puppies in gunny sack. Beat sack with bat. Put puppies in pie crust, bake and top with powdered sugar.
Boy did that recipe cause a commotion on the recipe message board.
Well I can tell you that baking an apple pie kinda ends the arguement of who planted the tree. Who cares it was/is great
